Pre-shabbos home bake shoppe

My daughter made these decorated cookies.

OK, here's a test. I accidentally left out an ingredient from the challah on the left. What did I forget? Note that it is a lighter color and its surface is not quite as smooth as the two on the right.

I mix the ingredients by heart. I rarely make mistakes anymore, but last week I did.

I'm told via e-mail that the missing ingredient was not oil.

Originally, after reading the sentence about the color and surface, I was going to guess the egg wash, but the next sentence indicates that something was left out of the ingredients mixed for the dough.

Then I thought that omission of sugar would account for less browning. But sugar is food for yeast; while omitting it could perhaps be responsible for less of a smooth rise, resulting in a rougher surface, the loaf doesn't look over all less risen in comparison to the other loaves.

So I guessed oil.

Now I don't know. Perhaps I am over-thinking.
